Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Pasta and Grains     Rice Recipes

Number Of Ingredients 9

2 tablespoons extra-virgin olive oil
1 shallot, finely chopped (1/4 cup)
1 cup wild rice
3 cups homemade or store-bought low-sodium chicken stock
1/2 cup pecans
1/4 cup dried cranberries
1/4 cup golden raisins, coarsely chopped
2 tablespoons chopped fresh flat-leaf parsley
Coarse salt and freshly ground pepper

Steps:

  • Heat oil in a medium saucepan over medium heat. Add shallot, and cook, stirring occasionally, until tender, about 3 minutes. Add rice, and cook for 1 minute. Add chicken stock, and bring to a boil. Reduce heat, and simmer, covered, until rice is tender and starting to burst, 45 to 50 minutes. Drain any excess liquid. Transfer to a bowl.
  • While rice cooks, preheat oven to 400 degrees. Arrange pecans on a rimmed baking sheet, and toast until browned and fragrant, about 8 minutes. Let cool. Coarsely chop pecans.
  • Add toasted pecans, cranberries, raisins, and parsley to rice. Season with salt and pepper. Serve warm or at room temperature.

Tips:

  • Use a heavy-bottomed pot or Dutch oven to cook the wild rice. This will help to prevent the rice from sticking to the bottom of the pot and burning.
  • Rinse the wild rice thoroughly before cooking. This will help to remove any dirt or debris from the rice.
  • Add a pinch of salt to the water when cooking the wild rice. This will help to enhance the flavor of the rice.
  • Cook the wild rice according to the package directions. Be sure to not overcook the rice, as this will make it mushy.
  • While the wild rice is cooking, toast the pecans in a dry skillet over medium heat. This will help to bring out their flavor and make them more fragrant.
  • Add the toasted pecans, raisins, and orange essence to the cooked wild rice. Stir to combine.
  • Serve the wild rice immediately or store it in an airtight container in the refrigerator for up to 3 days.

Conclusion:

Wild rice with pecans, raisins, and orange essence is a delicious and easy-to-make side dish that is perfect for any occasion. The nutty flavor of the pecans, the sweetness of the raisins, and the citrusy flavor of the orange essence complement the earthy flavor of the wild rice perfectly.
