1 1/2 cups thinly sliced Vidalia onion
1/8 teaspoon sugar
1 garlic clove, sliced
1 tablespoon sherry vinegar
3 bunches dandelion greens, stemmed (about 7 ounces)
1/8 teaspoon coarse salt
Freshly ground pepper

Steps:

  • Heat oil in a medium skillet over medium heat. Add onion and sugar; cook, stirring occasionally, until onion is golden and has caramelized, about 15 minutes. Add garlic; cook, stirring occasionally,2 minutes. Add vinegar; cook until vinegar is warm, about 1 minute.
  • Add dandelion greens, and toss to combine. Cook until greens have just wilted, about 1 minute. Season with salt and pepper. Serve immediately.

8 medium red potatoes (about 1 1/4 pounds)
1 tablespoon salt
1 teaspoon olive oil
2 tablespoons unsalted butter
1 large Vidalia or other sweet onion, sliced 1/4 inch thick
1 tablespoon dark-brown sugar
1/4 teaspoon freshly ground pepper
1/2 cup hot milk, or more as needed
1 bunch dandelion greens, arugula, or other bitter greens, washed

Steps:

  • Place whole potatoes and 2 teaspoons salt in a large pot and add water to cover. Bring to a boil. Reduce heat to medium high; cook until tender, 30 to 35 minutes. Drain, return to pot, and keep warm.
  • While potatoes are cooking, heat olive oil and 1 teaspoon butter in a medium skillet over medium heat. Add onions and sugar, 1/2 teaspoon salt, and 1/8 teaspoon pepper; saute, stirring occasionally, until caramelized, about 20 minutes. Set aside.
  • Meanwhile, remove stems from greens. Roughly chop a quarter of the greens; set aside. Place remaining greens in a serving bowl.
  • While potatoes are still hot, roughly mash using a large fork or a whisk. Add hot milk, remaining butter, 1/2 teaspoon salt, and 1/8 teaspoon pepper; mash to combine. Stir in half the onions and the chopped greens. Place potatoes over greens in bowl; top with remaining onions. Serve hot.

2 bacon strips, diced
2 hard-boiled large eggs, chopped
DRESSING:
2 eggs
2 tablespoons white vinegar
1 tablespoon sugar

Steps:

  • Wash dandelion greens thoroughly; drain and place in a large salad bowl. Chill. , Meanwhile, in a skillet, fry bacon until crisp. Remove and drain on paper towels. 3 -4 quarts dandelion greens
8 slices bacon
1 teaspoon dry mustard
2 tablespoons sugar
6 tablespoons cider vinegar
1 teaspoon salt
1/4 teaspoon cracked pepper

Steps:

  • Washing the greens very carefully, discarding the roots and tough stems. Dry between two towels. Tear the greens into small pieces.
  • Fry the bacon in a large skillet until the bacon is very crisp. Remove bacon to paper towel.
  • Add the mustard, sugar, vinegar, salt and pepper to the fat in the pan. Bring to boil and put in dry greens.
  • Cover and cook the greens for about 3 minutes, until just hot and wilted.
  • Transfer to a warm vegetable dish and crumble bacon all over the top.

2 medium-size onions, peeled and sliced thin
1 1/2 pounds fresh dandelions, washed and stemmed
1 clove garlic, peeled and crushed
2 tablespoons fresh lemon juice
Coarse sea salt, to taste
4 lemon wedges

Steps:

  • Heat the olive oil in a 9- or 10-inch skillet over medium heat. Pat the onions dry between paper towels. Add the onions to the skillet and cook, stirring often, until golden, about 10 minutes. Using a slotted spoon, remove half of the onions from the skillet and set them aside to cool. Raise the heat and continue cooking the remaining onions until crisp and golden brown, about 5 minutes. Transfer the fried onions with a slotted spoon to paper toweling to drain.
  • Blanch the dandelions in lightly salted boiling water until just tender, about 3 minutes. Drain, refresh under cold running water and squeeze out the excess water. Shred the dandelions and chop the reserved half-cooked onions. Heat the oil that remains in the skillet over medium heat.
