Steps:

  • Preheat the oven to 350℉ (180℃). Arrange the squash, cut-side down, on a rimmed baking sheet. Add ¼ cup of water, cover with aluminum foil, and bake until the squash is very soft, 28 to 32 minutes. Remove from the oven, and let cool enough to handle, scoop out the pulp into a large bowl. Heat the oil in a large skillet, and stir in the almonds and cook until golden. Transfer to a plate with a slotted spoon, and set aside. Sauté the onions in the same pan over medium heat until translucent. 2 pounds winter squash, peeled, seeded, and cut into 2-inch pieces
3 tablespoons vegetable oil
1/4 cup (about 1 ounce) slivered almonds
3 large onions, thinly sliced
1/4 cup sugar
2 teaspoons ground cinnamon
1/2 cup raisins, plumped in warm water and drained
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375°F. Place the squash in an ovenproof dish and bake until tender, 50 to 60 minutes.
  • Meanwhile, in a skillet, heat the oil over medium-high heat. Add the almonds and fry until golden, 3 to 4 minutes. With a slotted spoon, transfer the nuts to paper towels to drain.

1 butternut squash, halved and seeded
1 tablespoon olive oil
2 red onions, sliced
4 tablespoons pine nuts
5 ounces crumbled feta cheese
2 tablespoons chopped fresh mint
salt and freshly ground black pepper to taste
1 tablespoon olive oil, or to taste
1 tablespoon balsamic vinegar, or to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Place butternut squash in a baking dish dish, cut-side down. Fill baking dish with 1/2 inch of water.
