1 1/2 cups granulated sugar
1 1/3 cups (2 sticks plus 5 tablespoons) salted butter, softened
1/2 orange, zested
2 large eggs
1 teaspoon vanilla extract
4 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
2 tablespoons whole milk
One 30-ounce can cherry pie filling
1 cup confectioners' sugar
1 tablespoon whole milk
1 lemon, zested

Steps:

  • For the cookie bars: Preheat the oven to 375 degrees F.
  • Cream together the granulated sugar, butter and orange zest in the bowl of an electric mixer fitted with a paddle attachment until pale and fluffy, 1 to 2 minutes. Add the eggs one at a time, mixing in between, then the vanilla. Mix until fully incorporated.
  • Sift together the flour, baking powder and salt in a bowl. Add half the dry ingredients to the butter-sugar mixture, mixing, then add half the milk. Add the remaining dry ingredients followed by the remaining milk and mix until the dough comes together.
  • Press two-thirds of the dough into the bottom of a 9-by-13-inch glass baking dish. Pour over the cherry pie filling and spread it out evenly. Drop spoonfuls of the remaining dough over the pie filling. Bake until the edges and top are golden and the center is set, 35 to 40 minutes. Let the bars cool and set, 15 to 20 minutes.
  • For the glaze. Add the confectioners' sugar, milk and lemon zest to a bowl and stir until smooth. Drizzle over the bars. Cut into bars in the baking dish and serve.

1 1/2 sticks unsalted butter
1 cup brown sugar
3/4 cup granulated sugar
1 teaspoon vanilla extract
2 eggs
2 heaping cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 heaping cup quick oats
1/2 cup shredded coconut
1/4 cup flax seeds
1/4 cup sunflower seeds
3/4 cup dried apricots, chopped
1/2 cup dried cherries
1/2 cup chopped pecans
1/4 cup golden raisins

Steps:

  • Preheat the oven to 375 degrees F.
  • In the bowl of an electric mixer, cream the butter together with the brown sugar and granulated sugar. Add the vanilla and eggs. Next, add the flour, baking soda and salt. Add the oats, coconut, flax seeds and sunflower seeds. Fold in the apricots, cherries, pecans and raisins.
  • Drop the batter onto cookie sheets with a cookie scoop or two spoons. Bake for 12 minutes, then cool on a rack.

My sister and I love something sweet with our coffee in the morning. We created this recipe to make a wholesome breakfast. I generally double the batch and keep them in the freezer. They taste even better frozen (still soft!). Whole grains, fiber, and protein and no butter! Can it really be delicious? Yes! My kids can't keep their fingers out of the batter. 1 cup walnuts
1 ½ cups old-fashioned rolled oats (not instant)
⅓ cup whole wheat flour
½ cup ground flax meal
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
½ cup almond butter
¼ cup canola oil
¼ cup blue agave nectar
⅓ cup brown sugar
1 egg
1 teaspoon vanilla extract
½ cup dried cherries
1 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper.
  • Pulse the walnuts in a food processor several times to chop; continue processing until the walnuts are ground into flour; transfer to a bowl. Mix in the rolled oats, whole wheat flour, flax meal, baking soda, salt, and cinnamon until thoroughly combined.
  • Combine the almond butter, canola oil, agave nectar, brown sugar, egg, and vanilla extract in the food processor and process a few seconds to blend the ingredients well; transfer the almond butter mixture to a large bowl and fold in the dried cherries and chocolate chips. Mix the walnut-oatmeal mixture into the almond butter mixture (dough will be very thick).
  • Scoop up heaping teaspoons of dough, and form into balls; lay the dough balls onto the prepared baking sheets, about 2 inches apart.
  • Bake in the preheated oven until lightly browned, 8 to 10 minutes. Remove from oven and flatten the cookies with a spatula. Allow to cool for about 5 minutes on the baking sheets before removing to finish cooling on wire racks.

1 1/4 cups date sugar (or 8 oz bag date sugar)
3/4 cup rice syrup (or 1/2c agave syrup 1/4 water)
3 cups rolled oats
2 cups natural bran (I use oat bran)
10 ounces prune puree
2 tablespoons canola oil
1 tablespoon vanilla
1/2 cup cocoa powder
1/2 cup chocolate chips
4 egg whites
2 cups wheat flour
1 tablespoon baking soda
1 tablespoon cinnamon (optional)

Steps:

  • Mix all ingredients except egg whites and flour and soda together in a large bowl.
  • Sift the flour and soda together and add to the bowl.
  • Beat the egg whites foamy and stir in well.
  • It will take quite an effort to mix it all together well.
  • Put into a parchment lined jelly roll pan and pat down as evenly as possible.
  • Keep your hands moistened while you do this.
  • (STICKY) Bake at 350 F for about 30 minutes, although you can check it at 25 minutes.
  • Cut into 18-24 bars as you wish.
  • Keeps well wrapped and refrigerated.
  • I have not tried to keep them outside of the fridge, nor in the freezer.

3/4 cup unbleached all-purpose flour (3.4 oz.)
3/4 cup whole wheat flour (3.4 oz.)
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups rolled oats, old-fashioned (3 1/2 ounces)
1 cup toasted pecans, chopped (4 ounces)
1 cup raisins (or other dried fruit)
1/2 cup toffee pieces (or chocolate chips can be substituted)
6 tablespoons unsalted butter, softened but still cool
1/2 cup creamy peanut butter
1 1/2 cups light brown sugar
1/3 cup molasses
1 large egg
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees.
  • Line two large baking sheets with parchment paper.
  • Whisk flour, baking powder, baking soda, and salt in medium bowl.
  • In second bowl, stir together oats, pecans, dried fruit, and toffee or chocolate chips.
  • In standing mixer (with flat beater) beat butter, peanut butter and sugar at medium speed until no sugar lumps remain, about 1 minute.
  • Scrape down sides of bowl with rubber spatula; add egg, molasses and vanilla and beat on medium-low speed until fully incorporated, about 30 seconds.
  • Scrape down bowl; with mixer running at low speed, add flour mixture; mix until just combined, about 30 seconds.
  • With mixer still running on low, gradually add oat/nut mixture; mix until just incorporated.
  • Give dough final stir with rubber spatula to ensure that no flour pockets remain and ingredients are evenly distributed.
  • The dough will seem dry, but resist the urge to add more liquid.
  • Divide dough evenly into 16 portions, each about 1/4 cup, then roll between palms into balls about 2 inches in diameter; stagger 8 balls on each baking sheet, spacing them about 2 1/2 inches apart.
  • Using hands, gently press each dough ball to 1 inch thickness.
  • Bake both baking sheets 12 minutes, rotate them front to back and top to bottom, then continue to bake until cookies are medium brown and edges have begun to set but centers are still soft (IMPORTANT -- cookies will seem underdone and will appear raw, wet, and shiny in cracks), about 7 minutes longer.
  • DO NOT OVERBAKE!
  • Cool cookies on baking sheets on wire rack 3 minutes; using wide metal spatula, transfer cookies to wire rack and cool to room temperature.
