We used to have a cucuzza (opo) squash tree when I was little, and I loved this soup. Yes, even as a little kid, this was good! If you can't find these squash, you can use more common ones like summer or zucchini. Serve immediately over warm cooked white rice.

1 ½ teaspoons cooking oil
½ pound ground pork
1 clove garlic, minced
4 cups peeled, seeded, and diced opo squash
1 teaspoon salt
2 (15 ounce) cans chicken broth
2 cups water
2 cubes chicken bouillon
1 ½ teaspoons chopped fresh parsley

Steps:

  • Heat oil in a wok or heavy pot over medium heat; gently cook and stir pork, breaking up meat as it cooks, until browned and crumbly, about 5 minutes. Add garlic; cook and stir until fragrant, about 30 seconds. Add squash and salt; cover wok and cook, stirring 2 to 3 times, over high heat for 2 to 3 minutes.
  • Mix chicken broth, water, and chicken bouillon to squash mixture and bring to a boil; reduce heat to medium-low and simmer, stirring occasionally, until squash is tender and transparent in the soup, 18 to 20 minutes.
  • Remove wok from heat and cool soup slightly. Skim surface to remove accumulated fat. Stir parsley into soup, return soup to a boil, and remove from heat.

This is the soup that is eaten when doing the General Motors diet, but I like it and make it just to eat it. Veggie substitution/changes are allowed to be made, so it's not set in stone (I like to add carrots). It doesn't have much broth, so if you want you can add more water than what I put in the ingredients. This makes A LOT of soup, so I recommend cutting it in half. I have no idea how many servings it makes, but it is a lot. You can freeze servings in individual baggies or kitchen storage containers!^_^ The pictures in the pot are of approximately half the below recipe.

6 large onions
2 green peppers
1 (29 ounce) can tomatoes
1 head cabbage
1 bunch celery
4 (1 1/4 ounce) envelopes onion soup mix
assorted herbs (whatever you want)

Steps:

  • 1. Cut up onions, peppers, cabbage, and celery.
  • 2. Put everything in large pot.
  • 3. Cook until tender (I do it for like 1 and a half hours), stirring occasionally.

This recipe is actually part of a weight loss program but I love to just eat the soup anytime.I make a large pot and when ever I'm hungry,I'll eat a bowl of soup.My meat loving husband loves it too.It's a delicious vegetable soup. You can use vegetable or chicken broth.

2-3 tablespoons olive oil
1/2 head cabbage
1 c celery,diced
1 white or brown onion,diced
1 green bell pepper,diced
1 c carrots,diced
2-3 cloves garlic,minced
4 c chicken broth
14 ox can diced tomatoes
1 t. dried oregano
1 t, dried basil
1/2 t. red pepper flakes and cayenne
salt and pepper,to taste

Steps:

  • 1. Heat 2-3 tablespoons of olive oil in a large pot over medium heat. Add celery, onions, bell peppers, and carrots. Saute until slightly tender. Stir in garlic. Pour in chicken broth. Stir in tomatoes and cabbage. Bring to a boil and then reduce heat. Cook until cabbage is tender. Stir in oregano, basil, red pepper flakes, black pepper and salt (if using) Taste broth and adjust seasoning if needed.
  • 2. My Changes: I add 5 cloves garlic and used 8 c chicken broth.Also I think the soup tastes better if the vegetables are just tender,not over cooked.I did not have can tomatoes so I just added 3 diced Roma tomatoes.
