Look for masarepa in Latino grocery stores, it will usually be labeled as masarepa or harina de maiz precocida. You can also find it at ethnicgrocer.com

2 1/2 cups warm water
2 cups arepa flour (masarepa)
1 pinch salt
1 teaspoon olive oil

Steps:

  • Pour water into mixing bowl, stir in arepa flour and salt. Continue stirring until a soft dough forms. Knead gently until the dough feels smooth. Tear off ping-pong-ball-size pieces of the dough and shape them into 3 inch patties, about 1/2 inch thick.
  • Heat 1/2 tsp oil in large nonstick skillet over medium heat. Add 6 arepas and cook, turning once, until golden and crusty on the outside, 3-4 minutes per side. Transfer to a heated plate and keep warm; repeat with remaining oil and arepas. Serve at once. Store leftovers in a zip-lock freezer bag in the fridge for up to 3 days or freeze for 1 month.
  • 1 point per serving (1 arepa).
  • Variations: Try making arepas with warmed fat-free milk instead of water, and when kneading the dough, knead in 1/2 cup shredded fat-free mozzarella cheese. Add 1/2 point.
  • To reheat leftovers, wrap them in foil, place on baking sheet and heat at 350F until hot (about 10 minutes). Remove the foil and bake 5 more minutes to crisp. For best results, thaw in refrigerator overnight.

I went on a missions trip almost 13 years ago with Teen Missions International and this was one of the meals served. I made sure to come home with the recipe as it was a team favourite!

6 soft tortillas
1 lb ground beef
1 (1 1/4 ounce) package taco seasoning mix
1 cup sour cream
1 cup chopped onion
1/2 cup water
2 cups grated cheddar cheese
2 (8 ounce) cans refried beans

Steps:

  • Fry ground beef and onions until meat is cooked through.
  • Add taco seasoning and water and cook until thickened.
  • Line the pan or casserole dish with 3 tortillas, then layer with 1/2 of the meat, 1/2 of the beans, 1/2 of the sour cream and 1/2 of the cheese.
  • Repeat.
  • If you like it spicy, then top it with some hot sauce or salsa.
  • Bake at 350 until bubbly (about an hour).
  • *OAMC directions: after baking, place in rigid container and seal with a lid (and plastic wrap if desired). Place in freezer. When ready to eat, thaw, place in baking dish, and reheat in 400 degree oven for 30 minutes.

It's hard to believe that these are only 1 point! A great recipe for healthier flour tortillas. Fill these with beef, chicken, shrimp, and/or veggies. Use sour cream, salsa or guacamole to dip them in. These are also ideal for Nif's Very Basic Cheese Quesadillas or Nif's Healthy Baked Beef Burritos. Enjoy!

1 cup masa harina
1/2 teaspoon salt
1/2 cup water

Steps:

  • Combine the masa harina and salt in a medium bowl; stir in 1/4 cup of the water, then stir in enough of the remaining 1/4 cup water, 1 tablespoon at a time, to form a soft dough. Divide the dough into 6 pieces and shape each into a ball. Roll each ball out between sheets of plastic wrap into a 6-inch round.
  • Set a medium nonstick skillet over medium heat and heat until a drop of water sizzles in it. Reduce the heat to medium-low. Add a dough round and cook until speckled and slightly puffed, about 1 minute on each side. Transfer the tortilla to a plate lined with a clean kitchen towel; fold the towel over to keep the tortilla warm. Cook the remaining dough rounds to make a total of 6 tortillas, stacking them in the towel as they are cooked.
  • To reheat the tortillas, wrap each one in a separate paper towel or napkin and microwave on High until heated, about 5 seconds for each tortilla.
