6 (29 ounce) cans yams in syrup, drained
1 ½ cups brown sugar
2 tablespoons ground cinnamon
1 teaspoon ground cloves
1 teaspoon allspice
¼ cup heavy cream
1 (10.5 ounce) package miniature marshmallows
aluminum foil
cooking spray

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray 2 pieces of aluminum foil with cooking spray.
  • Mash drained yams in a large bowl with a fork. Add ingredients in the following order, mixing well after each addition: brown sugar, cinnamon, cloves, allspice, and heavy cream. Pour mixture into two 8-inch square baking dishes. Sprinkle 1/2 of the marshmallows over each dish and cover with aluminum foil, spray-side down.

After a few trials, this was the final incarnation. It is now a Thanksgiving staple for both his and my family's dinners.

1 (40 ounce) can bruce cut yams, drained
1/2 cup brown sugar
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 egg, beaten
4 tablespoons melted butter
1 (16 ounce) bag miniature marshmallows

Steps:

  • Spray 1 quart baking dish with Pam.
  • Heat oven to 350 degrees.
  • Mash yams in a large bowl and add brown sugar, salt, cinnamon, egg, and melted butter.
  • Mix well.
  • Place 1/2 mixture in baking dish.
  • Top with a layer of marshmallows, then add remaining mixture.
  • Bake for 30 minutes.
  • Remove from oven and top with remaining marshmallows.
  • Turn oven to broil and move casserole to the upper middle rack. Broil for approximately 5 minutes or until marshmallows are lightly browned.

Coarse salt and ground pepper
1/2 cup whole milk
4 tablespoons butter
1/2 teaspoon ground nutmeg

1/2 cup heavy cream

1/2 cup pecans
1/4 cup butter - melted
1/4 cup brown sugar
1 teaspoon cinnamon
1/4 cup flour
8 ounces mini marshmallows

Steps:

  • Cook sweet potatoes using the desired method until soft. I prefer to boil them for about 20-30 minutes. You can remove the peels before or after - I do after I've boiled them.
  • Preheat oven to 350 degrees.
  • Place cooked sweet potatoes in a bowl and mash until you reach the desired consistency.
  • Add in heavy cream, eggs, brown sugar, butter, cinnamon, and pecans. Mix together until everything is combined.
