1 ham bone with some meat
4 carrots, diced
½ large Spanish onion, diced
5 stalks celery, diced
2 teaspoons dried thyme
1 bay leaf
2 tablespoons kosher salt

8 cups water, or as needed

Steps:

  • Place split peas, ham bone, carrots, onion, celery, thyme, bay leaf, salt, and pepper into a large pot; pour in water. Bring mixture to a boil and skim off any foam with a spoon. 2 cups yellow split peas, about 1 lb
1 teaspoon dried oregano

  • Put the onion in a large non stick saucepan over medium low heat.
  • Cook for about 5 minutes, stirring constantly, until the onion is wilted and translucent.
  • Add the garlic, stir and continue to cook for 1 minute.
  • Stir in the split peas, then the seasonings, hot sauce and the broth.
  • Raise the heat to medium and bring to a boil.

1 medium red onion, chopped

6 cups chicken stock, low-sodium chicken broth, or water

  • Soup:
  • Heat a large heavy pot over medium and pour in oil. Add onion and carrots, season with a five-finger pinch of salt, and cook, stirring often, until vegetables are very tender and just taking on a hint of color at the edges, about 5 minutes. Lightly crush fennel seeds with a mortar and pestle, or roughly chop them. Add fennel seeds, curry, and mustard seeds to pot and cook, stirring, until fragrant (the mustard seeds may begin to pop), less than a minute. Add split peas, stir to coat, then add stock and 4 cups water. Increase heat and bring to a boil, then simmer, stirring occasionally and adding more water if soup looks too thick, until split peas are very tender and some are starting to disintegrate, 50-55 minutes.
  • Mash soup with a potato masher until split peas are in small pieces and soup is textured but creamy (if you prefer a smoother soup, use an immersion blender directly in the pot). Taste and adjust seasoning with more salt.
  • Coconut and assembly:
  • While the soup is simmering, lightly crush coriander, fennel, and mustard seeds.
  • Heat oil in a small skillet over medium and cook coconut flakes and spices, stirring constantly, until spices are sizzling and coconut is golden brown, about 1 minute. Transfer to a plate, season with salt, and let cool (coconut will crisp as it cools).
  • Serve soup topped with spiced coconut and cilantro.

2 tablespoons unsalted butter
1 teaspoon chopped fresh chives
1/2 teaspoon dried savory, crumbled
2 teaspoons salt

Steps:

  • Rinse peas and combine in a 6- to 8-quart heavy pot with water, salt pork, and half of onions. Bring to a boil, skimming froth, then reduce heat and simmer, partially covered, until peas are tender but not falling apart, 1 to 1 1/2 hours.
  • Cook leek and remaining onions in butter in a large heavy skillet over moderate heat, stirring, until softened, about 10 minutes. 1 pound salt pork in a piece
1 bay leaf
1/2 to 1 teaspoon dried marjoram or thyme

Steps:

  • Wash the yellow split peas carefully. Cover them with chicken broth, add the chopped onions, salt pork, bay leaf and herbs and bring to a boil. Lower the heat and simmer, partially covered, for 1 to1 1/4 hours or until the peas are tender but have not fallen apart.
  • Remove salt pork from the soup; discard the bay leaf and season soup to taste with salt and pepper. Cut the salt pork into 1/4 inch slices. Place a few slices of pork in individual serving bowls, ladle soup over the pork and serve with good rye bread.
  • VARIATIONS Add a chopped carrot and stalk of celery to the mixture; after you remove the salt pork, puree the soup and thin with more stock if too thick.

8 cups water
1 bay leaf
2 tablespoons butter
1 tablespoon olive oil
1 onion, finely chopped

1/2 teaspoon salt
1 teaspoon cumin
1 large lemon, juice and zest of

Steps:

  • Bring the peas, water, and bay leaf to a boil, then simmer until the peas are completely soft, about 45 minutes.
  • Remove bay leaf, press peas through a sieve and return the puree to the soup pot.
  • Melt butter and olive oil in a skillet over medium heat.
  • Add onions and cook until soft. Add carrot, celery, garlic, salt, and ground cumin, and cook 10 minutes.
  • Add the vegetables to the pea puree and simmer until they are soft. (Rinse out the skillet with a small amount of water, then add the water to the soup.) Add lemon peel and juice to taste.
  • Check for salt and cumin and add more of each if desired.

1 cup diced onion
1 cup diced carrot
1 cup diced celery
1 large garlic clove, minced
6 cups chicken broth
1 1/2 cups yellow split peas, rinsed and drained, or

1 large bay leaf
1 1/2 cups chopped fresh spinach leaves, lightly packed or

  • In a large cooking pot, heat olive oil on medium-high heat.

This is from a veg cookbook purchased on the checkout lane at the grocery store but I'm not sure which. It is a lovely soup, and it gets better over a day or so. The ingredient list appears lengthy, but it is largely due to the yummy combination of spices. The original recipe calls for a combination of any veggies as long as you reach 4 cups (or a 16 oz bag of frozen veggies). I list specific veggies here as they are the ones recommended in the recipe.

1/2 teaspoon salt
1 cup yellow split peas (dry)
1 cup green beans
1 cup cauliflower
1 cup broccoli

This recipe was my mother's which I modified to make it vegetarian. My mother used to use chicken stock. If you promise not to tell her, I think it is a lot better than her's was. I made it for her and she swears it is her recipe. I never let on that it isn't. Everyone who tastes this soup loves it.

4 cups yellow split peas (rinsed and drained)
6 carrots (preferably in slivers or matchsticks, chopped works)
6 stalks celery, chopped
5 medium onions, chopped
1 cup pearl barley, rinsed and drained
3 bay leaves
salt and pepper, to taste
2 garlic cloves, crushed
1 1/2 tablespoons oil (to saute the onions)
5 tablespoons instant chicken-style consomme soup and seasoning mix
water (for amount, see directions)
whole wheat croutons

Steps:

  • In a large teflon coated frying pan over medium heat, saute 1/2 the onions with the oil until soft and dark brown.
  • Turn off heat.
  • Add crushed garlic.
  • Set aside.
  • Put carrots, celery, 1/2 of the chopped onions, split peas and the powdered chicken-flavored consomme into an 8 quart pot.
  • Fill with cold water till about 1 inch from top.
  • Cover and bring to a boil.
  • Once it has come to a boil, reduce heat, stir in bay leaves and barley.
  • Simmer covered for 2 hours (until all the liquid is and remains cloudy).
  • Stir in the onions and garlic and simmer for an additional half hour. Season to taste.
  • Sprinkle some croutons on top fo ladled soup and serve.
  • Or ladle into containers and refrigerate for up to a week or freeze for up to 6 months. To reheat, microwave on high until hot, add water if it is too thick and re-season if necessary.

4 cups chicken or vegetable stock (may be made from concentrate), more as needed

Approximately 8 frankfurters, cut into 1-inch pieces

Steps:

  • In a food processor, combine onion, carrot, celery and garlic. Process until finely chopped.
  • Place a heavy, wide saucepan over medium heat, and add oil. When hot, add chopped vegetables, and sauté until soft but not colored, 5 to 10 minutes. Stir in mace. Add split peas, and stir to mix well.

2 teaspoons olive oil
1 onion, diced
1 carrot, diced
1 celery, diced
2 garlic cloves, minced
1 cup yellow split peas, picked over and rinsed and drained
1/2 lb red potatoes, scrubbed and diced
4 cups reduced-sodium chicken broth
1/2 teaspoon dried oregano
1/8 teaspoon black pepper
1/4 lb slice of roasted turkey breast, diced

Steps:

  • Heat oil in large saucepan over medium heat. Add onion, carrot, celery, and garlic.
  • Cook, stirring until onion is softened, about 5 minutes.
  • Add split peas, potato, broth, oregano, and pepper and bring to a boil.
  • Reduce heat and simmer, covered, until split peas are very tender, about an hour.
  • Stir in turkey and cook until heated through, about 5 minutes.

1 lb yellow split peas
1-1/2 c cut & diced .....lean cooked ham thick slice.
1 large onion...diced
2 bay leaves
3 qt water.
1/2 tsp ground black pepper
1 tsp ground thyme
1 pinch ground allspice....for flavor
1/2 c each...optional....chopped carrot and or celery can be added.

Steps:

  • 1. Rinse and sort thru peas. Add and put into the crockpot with the fresh water.
  • 2. Chop onion. Add to the pot.
  • 3. Dice the ham . Add to the pot, with all the other ingredients. Cover and cook on high about 3 hours. If you need more liquid, add 1 can of chicken broth.
  • 4. Serve with crusty bread, rye bread or crackers, I like Kavli, 5 whole grain, Crispbreasd. It is imported from Norway. See picture.
  • 5. Set the butter out for crackers, etc. sprinkle with a little parsley and serve this wonderful soup. Adding salt depends on how salty your ham is. You can decide, after a taste.

From the Williams-Sonoma Beans and Rice cookbook. While the yogurt sauce is good, we prefer it without. Instead, we just use a large amount of cilantro. This mildly gingery soup is best when served hot, but it is also good chilled. The distinctive yogurt topping is similar to Indian raita, a blend of yogurt and various spices.

1 1/2 cups yellow split peas
3 tablespoons butter
1 yellow onion, chopped
1 carrot, peeled and cut into 1/4-inch dice
2 teaspoons grated peeled fresh ginger
7 cups chicken stock (or vegetable stock or water)
salt & freshly ground black pepper
1/2 cup plain yogurt
1/8 teaspoon ground turmeric
1/8 teaspoon ground cumin
1/8 teaspoon ground coriander
salt & freshly ground black pepper
3 tablespoons cilantro, chopped (fresh coriander)

Steps:

  • Pick over and discard any damaged peas or stones. Rinse the peas. Drain.
  • In a soup pot over medium heat, melt the butter. Add the onion and carrot and saute, stirring, until the vegetables are soft, about 10 minutes. Add the ginger and stock or water and the rinsed peas. Bring to a boil, reduce the heat to low and simmer gently until the peas are completely soft, 45-60 minutes.
  • Remove from the heat and let cool slightly. Use a blender, food processor or hand blender to puree until smooth. Thin with water or stock, if necessary. Season with salt and pepper.
  • Meanwhile, to make the garnish, in a small bowl whisk together the yogurt, turmeric, cumin, ground coriander and salt and pepper to taste.
  • Ladle the soup into individual bowls. Drizzle with the spiced yogurt and sprinkle with the cilantro.

I cut this out of the Vancouver Sun newspaper years ago. The article said they developed it in their test kitchen. It quickly became a family favourite. The caramelization of the onions and carrots takes some time but other than that, it is a breeze to make and very yummy. The pepper doesn't make any heat that we can detect but it might be spicy for some people. Healthy too!

3 tablespoons olive oil
2 onions, halved lengthwise and sliced
2 large carrots, diced finely
2 garlic cloves, minced
1 tablespoon curry powder
1 tablespoon fresh ginger, minced
1 serrano peppers or 1 jalapeno pepper, seeded and minced
2 cups yellow split peas, rinsed
8 cups broth (I use chicken but ham is good too)
salt and pepper
1/2 cup chopped fresh cilantro (optional)

Steps:

  • Heat oil in a large heavy saucepan over medium heat. Add onions and carrots and cook for about 60 minutes or until golden brown, stirring frequently. Do not let burn. Add the garlic, curry powder, ginger and serrano pepper. Cook five minutes and set aside.
  • In another large pan combine peas and broth. Bring to a boil and simmer for about an hour or until peas are tender.
  • Process in a blender until smooth or use an immersion blender. (I often skip this.).
  • Stir onion mixture into the soup and add salt and pepper to taste. Stir in cilantro if using but I usually don't bother. It's good either way.

Tips:

  • Soak the split peas: Soaking the split peas overnight or for at least 4 hours will help them cook more evenly and reduce the cooking time.
  • Use a variety of vegetables: Feel free to add other vegetables to the soup, such as carrots, celery, potatoes, or green beans.
