YOGURT BRAN MUFFINS (FROM FIBER ONE)

Yogurt Bran Muffins (From Fiber One) image

I got this recipe off the side of a Fiber One box... and it's a goodie. You can use pretty much any kind of bran cereal in it, and the addition of different types of yogurt adds subtle shadings of different flavours. I try to match the yogurt to whatever type of additional stuff that I add - 1/2 cup chopped fruit, berries, raisins, nuts, etc. (optional).

Tips:

  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of vinegar or lemon juice to 1 cup of milk. Let it sit for 5 minutes before using.
  • These muffins are best when they are fresh out of the oven. However, you can store them in an airtight container for up to 3 days.
  • You can add other ingredients to these muffins to make them your own. Some popular additions include chopped nuts, dried fruit, and chocolate chips.
  • Be sure to measure your ingredients carefully. This will help ensure that your muffins turn out perfect.
