QUICK HERB DROP BISCUITS

These biscuits are just as good for brunch as they are alongside a fried-chicken dinner.

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes     Bread Recipes

Time 25m

Yield Makes 8

Number Of Ingredients 6

2 cups all-purpose flour
1/4 cup chopped fresh chives
1 tablespoon baking powder
1 teaspoon salt
4 tablespoons cold unsalted butter
1 cup milk

Steps:

  • Preheat oven to 425 degrees. In a large mixing bowl, combine flour, fresh chives, baking powder, and salt. Using a fork or your fingers, work in butter (cut into small pieces) until small pea-size clumps form. Mix in milk until the mixture comes together as a sticky dough.
  • Using a 1/3-cup measure, drop 8 mounds of dough onto a nonstick baking sheet; pat down slightly.
  • Bake until biscuits are golden brown, rotating baking sheet halfway through, 15 to 20 minutes. Serve warm or at room temperature.

Tips:

  • To achieve a golden brown crust, ensure your oven is preheated to the specified temperature before baking the biscuits.
  • For a crispy exterior and a soft, fluffy interior, avoid over-mixing the batter. Over-mixing can result in a tough biscuit.
  • Drop the biscuit batter onto the prepared baking sheet, leaving sufficient space between each biscuit to allow for spreading during baking.
  • For a chewier biscuit, allow the batter to rest for a few minutes before dropping it onto the baking sheet.
  • Experiment with different yogurt flavors to create unique variations of the biscuits. For instance, strawberry yogurt can impart a sweet and tangy flavor.

Conclusion:

Yogurt drop biscuits are a delightful and versatile treat that can be enjoyed for breakfast, lunch, or dinner. With their simple ingredients, minimal preparation, and quick baking time, these biscuits are perfect for busy individuals or those seeking a convenient and satisfying meal. Whether you prefer them plain, topped with butter and jam, or served alongside your favorite soup or stew, yogurt drop biscuits are sure to be a crowd-pleaser.
