When it comes to this tangy fruit dip, I don't mind my kids playing with their food. We like to dip strawberries, but friends have reported great results with pears, bananas and more. -Shelly Bevington-Fisher, Hermiston, Oregon

FRUIT SALAD WITH HONEY-LIME DRESSING

Fruit Salad with Honey-Lime Dressing image

"I literally didn't know how to boil an egg until I was in my 20's - when I tried to impress a guy by making dinner for him," writes Sally Siegel of Pittsburgh, Pennsylvania. "I didn't have much success with the dinner or the guy, but I regrouped and put together a repertoire of fairly elegant dishes I felt confident making. Over the years, my cooking style has become more casual; I make dishes that are not too demanding, but still special for company."

YOGURT AND BEAN DRESSING WITH CILANTRO AND LIME

Yogurt and Bean Dressing With Cilantro and Lime image

One of my favorite variations on Lisa Feldman's bean and yogurt dressing base is her cilantro-lime dressing. Blend cilantro into just about any dressing, purée, sauce or soup, and I'll be there with a spoon. I use a little more cilantro and lime juice than Lisa calls for, to achieve a pale speckled-green mixture that is slightly zingy; add a small green chile if you want a bit more spice.

Time 2m

Yield 6 ounces, 2 serving(s)

Number Of Ingredients 3

6 ounces greek plain yogurt, your brand choice. (I use Nostimo brand yogurt)
1 tablespoon of strongly flavoured honey (Tupelo or Buckwheat are incredible! Regular honey can also be used)
1 tablespoon of chopped mint (I use either Pineapple mint or Peppermint)

Steps:

  • Place the 6 ounces of Greek yogurt into a bowl or container deep enough to stir vigorously. Stir to break up the yogurt.
  • Add chopped mint. Mash mint leaves with the back of a spoon, into the yogurt, to release the flavour. Stir well to combine.
  • Add tablespoon of honey. Stir to combine.
  • Allow to rest or serve immediately. This can either be stirred directly into chunks of fruit, or places on the side of fruit, to be stirred in when you eat it.
  • A favourite combination of Summer fruit that I serve this mixed into, is fresh peach chunks and blackberries! Also great over bananas and strawberries.

Tips:

  • Choose the right yogurt: Use plain, whole-milk yogurt for the best flavor and texture. Greek yogurt can also be used, but it will result in a thicker dressing.
  • Use fresh honey: Fresh honey has a more delicate flavor than processed honey. Look for honey that is local to your area, if possible.
  • Add some lime zest: Lime zest adds a bright, citrusy flavor to the dressing. Be sure to use a microplane or zester to get the finest zest possible.
  • Season to taste: Taste the dressing before serving and adjust the seasonings as needed. You may want to add more salt, pepper, or lime juice.
  • Use the dressing immediately: The dressing is best when used fresh. However, it can be stored in the refrigerator for up to 2 days.

Conclusion:

Yogurt honey and lime dressing is a versatile dressing that can be used on a variety of dishes. It is perfect for salads, vegetables, and even grilled meats. The dressing is light and refreshing, with a slightly tangy flavor. It is also a good source of protein and calcium. So next time you are looking for a healthy and delicious dressing, give yogurt honey and lime dressing a try.
