Yogurt, Lime & Black Pepper Marinade image

Another wonderful marinade for meats. I really like this one on lamb, but it is terrific on pork and poultry, too.

Provided by P48422

Categories     < 15 Mins

Time 5m

Yield 1 2/3 cups

Number Of Ingredients 9

1 cup plain yogurt
4 scallions, chopped fine
1/4 cup fresh lime juice
2 tablespoons finely grated lime zest
2 tablespoons safflower oil or 2 tablespoons other mild oil
2 cloves garlic, minced
1 tablespoon coursely ground black pepper
1 teaspoon chili powder or 1 teaspoon curry powder (optional)
1/4 teaspoon kosher salt

Steps:

  • Combine all ingredients.
  • Use immediately or cover tightly and refrigerate for up to a week.
  • For beef, pork, chicken, duck and lamb.

Tips:

  • Choose the right yogurt for your marinade. Plain yogurt is a good all-purpose option, but you can also use Greek yogurt for a thicker, creamier marinade.
  • Fresh herbs and spices are essential for a flavorful marinade. Use a variety of herbs and spices to create a complex flavor profile.
  • Don't be afraid to experiment with different ingredients. You can add citrus fruits, vegetables, or even nuts to your marinade.
  • Let the meat marinate for at least 30 minutes, but no longer than 24 hours. This will give the flavors time to penetrate the meat.
  • When you're ready to cook the meat, drain the marinade and pat the meat dry. This will help the meat brown evenly.

Conclusion:

Yogurt-mint-lime marinade is a versatile and flavorful marinade that can be used on a variety of meats. It's easy to make and can be tailored to your own taste preferences. Whether you're grilling, roasting, or baking, a yogurt-mint-lime marinade will help you create delicious and tender meat dishes.
