YUMMY MEATLOAF
What makes this meatloaf so good is how you cook it! It's very important to cook this in a baking dish rather than a loaf pan. The grease will drain from the meatloaf this way, and it will be firmer and taste better.

MUFFIN-PAN MEAT LOAVES
I used to have a catering business, and my specialty was comfort food. I once needed a gluten-free meat loaf, and my clients went nuts over this recipe. I often use an 8x8-in. pan or a loaf pan, but a muffin tin really cuts the cooking time. -Vangie Panagotopulos, Moorestown, New Jersey

VERY GOOD MEATLOAF WITH NO FILLERS, EGGS OR BREAD CRUMBS
We have always made this meatloaf as long as I can remember. When I tell people that we don't use fillers they always ask if it falls apart. It does not. You have to let it rest for 5 to 10 minutes before cutting. Sometimes I put in cheddar cheese.

Tips for Making the Best Cupcake Pan Meatloaf
- Use a cupcake pan with 12 cups for this recipe. If you use a larger or smaller pan, you will need to adjust the cooking time accordingly.
- Make sure the meatloaf mixture is packed tightly into the cupcake cups. This will help it to hold its shape and cook evenly.
- Don't overcook the meatloaf. It is done when it reaches an internal temperature of 160 degrees Fahrenheit.
- Let the meatloaf cool for at least 10 minutes before serving. This will help it to set and make it easier to slice.
- Meatloaf can be made ahead of time and reheated in the oven or microwave. For a quick and easy meal, make a double batch of meatloaf and freeze one for later.
