ZESTY ZUCCHINI BREAD

Zesty Zucchini Bread image

This makes a moist, delicious quick bread that tastes great at breakfast, tea, or any time you want a little something sweet but not too sweet. It lasts several days (but only if you can keep it hidden!) and freezes beautifully. It is good with or without butter. I've had this recipe for about fifty years. I've tried other recipes for zucchini bread, but we always like this one best. Hope you enjoy it!

Tips:

  • Use a mandoline or vegetable slicer to achieve uniformly thin zucchini slices. This ensures even cooking and a crispy breadcrumb coating.
  • Pat the zucchini slices dry with paper towels before coating them. Excess moisture can prevent the breadcrumb mixture from adhering properly.
  • Use a combination of bread crumbs and grated Parmesan cheese for the coating. The Parmesan cheese adds a savory, nutty flavor and helps the bread crumbs adhere to the zucchini.
  • Season the breadcrumb mixture generously with salt, pepper, and garlic powder. This adds flavor and depth to the coating.
  • Be sure to coat the zucchini slices evenly with the breadcrumb mixture. Use your hands to press the crumbs into the zucchini so they stick well.
  • Preheat your oven to the recommended temperature before baking the zucchini. This ensures that the zucchini cooks evenly and the breadcrumb coating becomes golden brown and crispy.
  • Serve the zucchini slices hot with your favorite dipping sauce, such as marinara sauce, ranch dressing, or tzatziki sauce.

Conclusion:

Zesty Parmesan Breadcrumb-Crusted Zucchini is a delicious and easy-to-make appetizer or side dish that's perfect for any occasion. With its crispy breadcrumb coating, tender zucchini interior, and flavorful Parmesan cheese, this dish is sure to be a hit with everyone who tries it.
