Tips:

  • Use a spiralizer to create zoodles. If you don't have a spiralizer, you can use a julienne peeler or a mandoline to create thin zucchini strips.
  • Choose ripe, flavorful tomatoes. Look for tomatoes that are plump and have a deep, red color. Avoid tomatoes that are bruised or have blemishes.
  • Use fresh basil. Fresh basil has a more intense flavor than dried basil. If you don't have fresh basil, you can use 1/4 teaspoon of dried basil.
  • Don't overcook the zoodles. Zoodles should be cooked until they are tender-crisp, not mushy. Cook them for no more than 2-3 minutes.
  • Serve the salad immediately. Caprese salad is best served fresh. If you make it ahead of time, the zoodles will start to wilt.

Conclusion:

Zoodle caprese salad is a refreshing and healthy summer salad. It is easy to make and is a great way to use up fresh zucchini. The zoodles are a light and healthy alternative to pasta, and the tomatoes and basil add a burst of flavor. This salad is perfect for a light lunch or dinner, or as a side dish at your next barbecue.
