Extra virgin olive oil
1/2 cup grated Parmesan cheese
2 tsp fresh thyme leaves, (no stems)
1 tsp dried oregano
1/2 tsp sweet paprika
1/2 tsp black pepper
pinch kosher salt

Steps:

  • Preheat your oven to 350 degrees F.
  • Mix together the grated Parmesan, thyme, and spices in a medium bowl.

6 large zucchini
1 cup fresh bread crumbs
1/4 cup chopped onion
1 tomato, chopped
1/2 teaspoon salt
1/4 teaspoon pepper

6 large zucchini, washed, halved lengthwise and cut inti 2-inch chunks
1 cup fresh breadcrumb
1 large tomatoes, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon parsley
2 tablespoons butter
1/2 finely chopped onion
2 garlic cloves, minced
2 tablespoons flour
1 cup whole milk
8 ounces shredded cheddar cheese

Steps:

  • Preheat oven to 350. Lightly spray/grease a 13" x 9" baking dish.
