ZUCCHINI BRUSCHETTA

Zucchini Bruschetta image

A squash twist on a tomato classic, this bruschetta uses ciabatta or rustic rolls and is flavored with tarragon.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers     Finger Food Recipes

Number Of Ingredients 9

4 ciabatta or rustic rolls, sliced in half crosswise
3 cloves garlic, peeled
3 tablespoons extra-virgin olive oil
4 zucchini, cut into 1/4-inch dice
Salt and freshly ground pepper
1 tablespoon coarsely chopped fresh tarragon, plus sprigs for garnish
1 tablespoon chopped fresh flat-leaf parsley
2 tablespoons nonpareil capers
2 teaspoons freshly squeezed lemon juice

Steps:

  • Grill or toast roll halves until golden. Rub each side with garlic, and set aside.
  • Heat olive oil in a large skillet over high heat. Add the zucchini, and cook, stirring occasionally, until slightly golden, crunchy, but still bright green, about 8 minutes. Add remaining ingredients, and toss to combine. Divide the mixture among the toasted bread, and serve garnished with tarragon sprigs.

Tips:

  • Choose fresh, firm vegetables: Look for zucchini and eggplant that are free of blemishes and bruises. The fresher the vegetables, the better the bruschetta will taste.
  • Slice the vegetables evenly: This will help them cook evenly. If the slices are too thick, they will take longer to cook and may not be as tender.
  • Don't overcrowd the pan: When cooking the vegetables, make sure to leave some space between them so that they can brown properly. If the pan is too crowded, the vegetables will steam instead of brown.
  • Season the vegetables well: Salt, pepper, and garlic powder are all great seasonings for zucchini and eggplant. You can also add other herbs and spices to taste.
  • Don't overcook the vegetables: Zucchini and eggplant should be cooked until they are tender but still have a little bit of bite to them. If you overcook them, they will become mushy.
  • Use a good quality bread: The bread is the base of the bruschetta, so it's important to use a good quality bread that is sturdy enough to hold up to the toppings.
  • Top the bruschetta with your favorite toppings: There are endless possibilities for toppings, so get creative and use what you like. Some popular toppings include tomatoes, basil, mozzarella cheese, and balsamic vinegar.

Conclusion:

Zucchini eggplant bruschetta boats are a delicious and easy-to-make appetizer or snack. They are perfect for summer parties or potlucks, and they can also be enjoyed as a light meal. With a few simple ingredients and a little bit of time, you can create a delicious dish that is sure to please everyone.
