1 cup grated Parmesan cheese
1/2 cup canola oil
1 tablespoon minced fresh parsley
1 garlic clove, minced
1/4 teaspoon salt

3 cups sliced zucchini
1 cup biscuit/baking mix
1 small onion, chopped

Steps:

  • In a large bowl, whisk the first seven ingredients. Stir in the zucchini, baking mix and onion. Pour into a greased 9-in. deep-dish pie plate. Bake at 350° for 25-35 minutes or until lightly browned.

3 eggs
1 c grated parmesan cheese or have used cheddar cheese
1/2 c canola oil ( that is correct 1/2 cup ) helps to brown the crust
1 Tbsp fresh or dried parsley
2 - 3 clove garlic, minced
1/2 tsp italian seasoning
1 tsp salt
1/2 tsp pepper
3 c sliced zucchini
1 c biscuit/baking mix
1 medium onion, chopped fine or 1 cup green onions sliced

Steps:

  • 1. Preheat oven to 350 degree F.
  • 2. In a large bowl, whisk the first eight ingredients. Stir in the zucchini, baking mix and onion. Pour into a greased 9-in. deep-dish pie plate. Bake at 350° for 40 - 45 minutes or until lightly browned. You could add ham, bacon, different spices and cheeses. A very good recipe!
