I first encountered these burgers about 30 years ago when I lived in New Orleans. There was a little hole-in-the-wall restaurant at the edge of the French Quarter (still there, I believe), called Port Of Call. They had a jukebox that played songs from the 50's and a blue cheese burger to die for! I still love it to this...

Steps:
- 1. Form the ground chuck into four generous patties and place in a cold 12-inch skillet. Over medium-low heat, cook slowly, adding salt and pepper and turning often.
- 2. When burgers are almost done to your liking, sprinkle blue cheese over each. Cover and reduce heat to low. Continue cooking just until cheese melts.
- 3. Serve on toasted buns with the garnish of your choice. They are SO yummy!
