100g butter
130g cooking oats
100g self raising flour
100g soft brown sugar
1 medium size egg
1/8 tsp salt
100g cooking chocolate
1/4 tsp vanilla extract
optional: raisins

Steps:

  • 1. Place butter and sugar together and cream 2. Add egg and vanilla extract and beat til fluffy 3. Combine rest of ingredients (I try to add them in parts, alternating between flour, oats, and chocolate) 4. Brush baking trays with butter and scoop out spoonfuls onto trays. For more fluffy, crunchy texture, I don't compact them with my hands. For more moist soft texture I do. 5. Bake in preheated oven for 180 C for 12-15 minutes or til golden brown. (Electric ovens take less time so watch 'em!) NOTE:The mixture can be chilled in fridge then cooked later.
