Bubble Up Enchiladas image

I made this mexican recipe last night when I had my mexican dinner. It was delicious. Using ground beef and biscuits with the enchilada sauce brought all the flavors together. 1 lb ground beef lean
1/2 pkg taco seasoning
8 oz tomato sauce
10 oz can enchilada sauce (i used the green)
1 can(s) refrigerated biscuits (i use mini grands)
2 c mexican cheese blend
1/2 c salsa for top (i used mild)
1/2 green pepper, diced

Steps:

  • 1. Preheat oven to 350 degrees. Brown lean ground beef and diced green pepper in a skillet and drain off fat. Add the taco seasoning, enchilada sauce, tomato sauce and 1 cup of cheese. Stir to combine.
  • 2. Cut the refrigerated biscuits into fourths and stir them in the meat mixture.
  • 3. Spray a 9 x 13 casserole dish with cooking spray and add the mixture. Bake for 25 minutes. Remove from the oven and sprinkle remaining cheese on top. Add about 1/2 cup salsa on top. Bake an additional 10 minutes. Let stand for 5 minutes before serving.
