CARROTS WITH MUSTARD/BROWN SUGAR GLAZE image

1 lb carrots, peeled, sliced 1/4 in
2 tbsp butter
1/2 tsp salt
2 tbsp light or dark brown sugar
1 1/2 tbsp dijon mustard
pepper
2 tbsp snipped fresh chives

Steps:

  • 1. Bring carrots, 2 tbsp water, butter, and salt to boil over medium heat. Cover and cook 3 minutes. Uncover, continue to cook until remaining water evaporate (1 min). 2. Stir in brown sugar and mustard. Continue cooking until carrots are tender and glazed (2 minutes). Season to taste with pepper and sprinkle with chives.
