Cheddar, Cucumber and Marmalade Sandwiches image

Melissa Clark came up with this recipe in 2011, a sandwich for her daughter, against the one she made for herself with Branston pickle in place of the marmalade. (Branston pickle is a British pickled chutney, made with vegetables, that dates back to the early 20th century.) You can certainly make the grown-up version. But this sweet, salty, cool variety is close to perfect for lunch or a light dinner.

These sandwiches are also great for meal prep. You can make them ahead of time and they'll still be delicious the next day.

I used a different type of marmalade than the recipe called for and it was still delicious. I think any type of marmalade would work well in these sandwiches.

I added some thinly sliced red onion to my sandwiches and it was a great addition. It added a little bit of crunch and spice.
