This is NOT your average tuna casserole dish! My mom made a version of this when I was growing up, it's always been a favorite and I've been making it and tweaking it for over 30 years. 2 box kraft mac & cheese
1 can(s) cream of mushroom soup
1 can(s) diced green chiles (small size)
1 can(s) peas (small size)
1 c sour cream
1 c sharp cheddar cheese (shredded)
3/4 stick real butter
2 can(s) light tuna in water (with water)
2 tsp seasoning salt
1 tsp pepper
OPTIONAL TOPPINGS: PANKO BREAD CRUMBS MIXED WITH A BIT OF MELTED BUTTER, PARMESAN CHEESE, MORE SHREDDED CHEDDAR OR ALL OF THE ABOVE! (DEPENDS ON HOW DECADENT YOU WANT TO GET) ;)

Steps:

  • 1. Cook noodles according to package. Drain. Return to pot and leave on low heat.
  • 2. Add butter, sour cream, tuna water and cheese packets to pot. Stir until butter melts. (No milk needed - the sour cream and tuna water take its place.)
  • 3. Add tuna, soup, cheese, chiles, peas, and seasonings and stir well.
  • 4. Pour into a square or 9 x 13 sprayed or greased (buttered) pan. Top with optional toppings (above).
  • 5. Bake @ 350 on top rack, uncovered for 30 mins. Crumbs should be nice and crunchy, but ovens vary so check after 20 mins to make sure crumbs are not burning.
