Categories     Peach     Pepper     Side

Number Of Ingredients 10

1 cup nectarine, finely diced
1/2 cup red bell pepper, finely diced
1/3 cup onions, finely diced
2 tablespoons jalapeno pepper, finely diced
1 tablespoon fresh cilantro, chopped
2 teaspoons olive oil
1/2 teaspoon (and more to taste) salt
1 pinch cayenne pepper
1 pinch freshly groud black peppr
1 tablespoon fresh lime juice

Steps:

  • Combine nectarines, bell pepper, onions, jalapeno pepper, and cilantro in a bowl. Stir in lime juice, olive oil, salt, and cayenne pepper.
  • Cover bowl with plastic wrap. Refrigerate to let flavors develop, 30 minutes to 1 hour.
  • Before serving, stir in black pepper. Add a pinch more salt, if needed.
  • Note: This salsa will work with any stone fruit, but nectarines are my favorite. They're usually sweet, even when still a bit firm, which I prefer texturally over a perfectly ripe price of fruit. Having said that, if you do have a few peaches to use up this summer, this is something to keep in mind.

This salsa was delicious! I used fresh nectarines from my garden and they were so sweet and juicy. I also added a bit of chopped jalapeño for a little bit of heat. It was the perfect salsa for my summer party.

I thought this salsa was really bad. The flavors just didn't work together and it was way too sweet. I would not recommend this recipe.

This salsa was okay. It wasn't bad, but it wasn't anything special either. I probably won't make it again.

This salsa was a little too sweet for my taste, but it was still good. I think I'll try it again with less sugar next time.

This salsa is the perfect balance of sweet, tangy, and spicy. I love the way the nectarines add a bit of sweetness, while the jalapeño and lime juice give it a nice kick. I'll definitely be making this again and again.
