CHINESE NOODLE PANCAKES image

Number Of Ingredients 9

5 large eggs
8 oz pork sausage, crunbled, cooked and drained
3 oz can chow mein noodles
1/2 c packed shredded carrots
1/2 c finely chopped onion
1/2 tsp diced thyme
1/4 tsp salt
1/4 tsp pepper
1/4 c vegetable oil for frying

Steps:

  • 1. Lightly beat eggs in a large bowl. Add remaining ingredients, except oil, stir to blend. Hear oil in large skillet over medium-high heat. Drop 1/4 cupfuls pancake mixture in hot oil. Cook 3 minutes on each side until golden brown. Drain on paper towels, Makes 4 servings.
