CHOCOLATE CHIP COOKIES (SOY AND DAIRY FREE) image

2 1/4 cups all-purpose flour
1 tsp. baking soda
1 tsp. salt
3/4 Palm oil shortening
3/4 cup white sugar
3/4 cup packed brown sugar
1 tsp. vanilla extract
2 eggs
1 12-oz package "Enjoy Life" chocolate chips (mini are good)
1 cup chopped nuts (optional)

Steps:

  • Combine flour, baking soda, and salt in a small bowl. Beat shortening, granulated sugar, brown sugar, and vanilla in a mixer bowl. Add eggs one at a time, beating well and scraping bowl after each addition. Gradually beat in flour mixture. Stir in chocolate chips and nuts. Drop round tablespoons of dough onto a baking sheet and bake at 375 for 11 minutes. Prepare a brown paper grocery bag by cutting it apart to make a flat piece of paper. Once cookies are done, let sit a few minutes and then place cookies on paper bag. Let them cool completely. The bag will absorb the extra oil from the cookies.
