CILANTRO AND LIME CHICKEN BURRITO image

Number Of Ingredients 12

I large boneless skinless chicken breast sliced into strips
1/2 cup fresh cilantro
1 tsp minced garlic
3 tbs olive oil
1/4 cup lime juice
1/2 cup fresh corn kernels
1 Cup black beans
1 medium shallot diced
1 tsp cumin powder
1/4 cup bell pepper
1/2 tsp salt
1/2 tsp ground pepper

Steps:

  • in processor mix oil,half of the garlic, cilantro and salt till pureed, in a tight sealed container pour mixture over chicken cover and marinate for 4 hrs in fridge. When ready to cook, dump entire contens of chicken mixture in skillet and saute to cooked thru, In another skillet combine remainder of ingredients and pan roast the mix till the corn starts crackling and add oil as needed to keep from burning. roll into flour tortillas making burritos and top with favorite topping, like cheese, sour cream, lettuce ect.
