Cincinnati Empress Chili image

This is a vegetarian version of Cincinnati chili. By freezing and thawing the tofu, you get a more meat-like texture.

Number Of Ingredients 16

2 teaspoons olive oil
2 onions, chopped finely
4 cloves garlic, minced
3 cups vegetable stock
2 tablespoons apple cider vinegar
1 large bay leaf, crushed
5 whole allspice berries
2 teaspoons salt
3 tablespoons chili powder
1 teaspoon cocoa
17 ounces tomato sauce
1/2 teaspoon cayenne pepper, to taste
1 teaspoon cumin
1 teaspoon cinnamon
1 can pinto beans, drained
1/2 lb tofu, frozen,thawed,& crumbled

Steps:

  • In large heavy pot, over medium-high heat, heat oil and saute onions for 8 to 10 minutes.
  • Add remaining ingredients.
  • Bring to a boil, then lower heat and simmer for 1 1/2 hours.
