3/4 cup red wine vinegar
3/4 cup water
1/4 cup olive oil
1/2 tsp. salt
1/2 tsp. black pepper
2 cloves garlic, minced
1 large head cauliflower cut into flowerette.
one 14.5 ounce can diced tomatoes, drained
1/2 cup minced red onion
1/2 cup chopped bell pepper
1 cup grated carrots
1/8 cup chopped fresh basil leaves
1/8 cup chopped flat-leaf parsley

Steps:

  • Combine vinegar, water, oil, salt, black pepper and garlic in a large saucepan. Add cauliflower, bring to a boil and simmer for ten minutes. Chill. Add remaining ingredients, mix and pour into serving bowl. Serve chilled or at room temperature.
