Corn and Bacon Casserole image

Creamy and delicious... yes, that about says it! Zinnia did a great job on this one. I had to go back for seconds!

Number Of Ingredients 10

6 slice bacon
1/2 c chopped onion
2 Tbsp flour
2 minced garlic cloves
1/2 tsp salt
1/2 tsp pepper
1 c sour cream
3 1/2 c corn
1 Tbsp fresh parsley, chopped
1 Tbsp fresh chives, snipped

Steps:

  • 1. In a large skillet, cook bacon until crisp.
  • 2. Drain, reserving 2 tablespoons of drippings. Crumble bacon; set aside. Saute onion in drippings until tender.
  • 3. Add flour, garlic, salt and pepper.
  • 4. Cook and stir until bubbly; cook and stir 1 minute more. Remove from the heat and stir in sour cream until smooth.
  • 5. Add corn, parsley, and half of the bacon; mix well. Pour into a 1 quart baking dish.
  • 6. Sprinkle with remaining bacon and chives.
