Cornish Loaf image

More of a cake really. My mum used to make this for school pack up. Its especially nice spread with some butter or with custard. You can use any dried fruit that takes your fancy.

Number Of Ingredients 10

1 lb self raising flour
1/4 lb margarine or 1/4 lb butter
1/2 lb sugar
1 ounce cherries
2 eggs
1/2 pint milk
1/2 lb dried fruit
2 ounces ground almonds
2 ounces chopped walnuts
1 tablespoon mixed spice

Steps:

  • Heat oven to Gas Mark 3, 160 C degrees.
  • Rub margarine into flour until mixture resembles fine breadcrumbs.
  • Add all other dry ingredients.
  • Mix eggs with milk together lightly.
  • Mix milk mixture into dry mixture.
  • Bake in 2 loaf tins for approximately 1 hour or until a knife inserted into the loaf comes out clean.
