COTTAGE CHEESE PANCAKES WITH BLUEBERRIES image

Number Of Ingredients 13

1 cup cottage cheese
¼ cup sour cream
2 eggs
1 Tbsp butter melted
½ cup flour
¼ tsp. salt
½ tsp. baking powder
Blueberries:
1 500ml. container frozen blueberries
½ cup sugar
½ Tbsp lemon juice
1 Tbsp cornstarch mixed in blueberry container with COLD water
Bring Blueberries, lemon juice and sugar to boil. Add cornstarch mixture, bring to boil again, then allow to cool slightly before serving.

Steps:

  • Blend cottage cheese, sour cream and eggs in Cuisinart. If making large batch, remove half to large bowl and then add remaining ingredients to Cuisinart and blend until combined. Combine with mixture in bowl. Pour by ¼ cupfuls onto hot griddle and flip when buubles appear to cover surface of pancake.

The pancakes were a little dry and the blueberries were a bit tart. I think I would add some sugar to the batter and use sweeter blueberries next time.
