Country Breakfast image

This is called a country breakfast because it has everything you love for breakfast all in one dish.

Number Of Ingredients 7

4 c potatoes, cooked and cubed
1/2 c chopped green bell pepper
2 Tbsp chopped onion
1/3 c butter
salt and freshly ground pepper
4 eggs
1 c shredded cheddar cheese

Steps:

  • 1. Cook potatoes, green pepper and onion in butter until lightly browned.
  • 2. Season to taste.
  • 3. Break eggs over potato mixture; cover, cook until eggs are done.
  • 4. Sprinkle with cheese; cover and heat until cheese melts.
