CRAB ROLL-UPS image

Yield 15 roll-ups

Number Of Ingredients 7

1 (7-1/2 oz) can crab meat - drained
3 TB fine soft bread crumbs
1 TB dry sherry (optional)
1 tsp chopped chives
1/2 tsp dry mustard
1/8 tsp salt
5 slices bacon, cut in thirds

Steps:

  • Chop crab meat and combine with all ingredients except bacon; mix thoroughly. Chill for 1 hour. Shape a tablespoon of mixture into small rolls; wrap each roll with bacon and secure with a toothpick. Place crab rolls in shallow baking pan or broiler pan. Bake at 400 degrees about 20 minutes. Or broil 4 to 5 inches from heat about 8 minutes; or until bacon is crisp. Drain on paper towels.

These were good, but not great. The crab filling was a little bland and the egg roll wrappers were a bit too thick. I think I'll try a different recipe next time.

I've made these crab roll ups several times now and they are always a crowd-pleaser. They're easy to make and can be tailored to your own taste preferences. I like to add a little bit of chopped celery and red onion to mine for extra flavor.
