Crock Pot Loaded Potatoes image

I am always asked to bring these potatoes to cookouts. I use velveeta and mayonnaise as the cheese sauce then I add all the fillings I love on my loaded potato skins. The microwave makes cooking time a little faster.

Number Of Ingredients 10

5 lbs potatoes, cut into 1-2-inch cubes (eight cubes per potato)
32 ounces Velveeta cheese, cubed
1 cup mayonnaise
1 cup sour cream
1/4 cup butter
1 teaspoon ground mustard
1 teaspoon pepper
1 (3 ounce) package oscar meyer bacon bits
1 tablespoon chives
3 green onions, sliced

Steps:

  • Cube potatos and place in microwave safe glass dish. Cover with plastic wrap and microwave for 20 min or until fork tender stiring every 7 minutes.
  • Place all other ingredients in large crock pot (on high) and let melt while the potatos are cooking.
  • Add potatos to crock pot and stir. Turn crock to low and let cook for about two hours so the cheese can absorb into the potatos.
  • If you like, you can top with more sour cream, bacon, and/or chives.
