Crock Pot Red Beans and Rice image

Number Of Ingredients 12

1 lb dry small red beans
1 tsp bacon grease
1 large onion, chopped
3 stalk(s) celery, chopped
6 clove garlic, minced
2 tsp onion powder
2 tsp garlic powder
1 lb diced ham
1 lb smoked sausage, sliced
2-3 Tbsp creole seasoning (i use tony chachere's)
3 bay leaves
hot cooked white rice

Steps:

  • 1. Soak beans overnight.
  • 2. Rinse beans and put in the crock pot and cover with water. Add all chopped celery and onion, garlic & onion powder, creole seasoning, bacon grease bay leaves. Turn slow cooker on high.
  • 3. Cook beans for 3-4 hours. Add smoked sausage and ham.
  • 4. Turn the heat to low and cook for another hour or so until beans are tender and liquid has thickened.
  • 5. Ladle red beans over hot cooked white rice.

This is my go-to recipe for red beans and rice. It's so easy to make, and it always turns out perfect. I love that I can just throw everything in the crock pot and forget about it. It's the perfect meal for a busy weeknight.
