CURRIED WHEAT BERRY SALAD image

Serves 4
1 cup wheatberries
1 apple peeled, cored and chopped finely
1 red bell pepper diced
1 small field cucumber cubed into small pieces
1/3 cup of slivered almonds
1/3 cup of raisins
3 Tablespoons olive oil
6 teaspoons apple cider vinegar
3 Tablespoons of honey
1 Tablespoon of curry powder

Steps:

  • - Soak wheat berries overnight in water - Bring to a boil and boil vigorously for 2 minutes, then let simmer gently for 30 minutes - In a large bowl, mix together oil, vinegar, honey and curry powder - Add cooled wheat berries to bowl - Add in apple, cucumber, nuts and raisins - Combine and serve
