DADDY'S FAVORITE CHICKEN image

Number Of Ingredients 12

1 2-3 pound Chicken fryer, cut up
1 cup flour
2 eggs
Salt
Pepper
1 clove garlic, chopped
1/4 cup chopped onion
1 10oz can cream of chicken soup
1 cup rice
3 cups of water
1 14oz can of chicken broth
1/2 cup canola oil

Steps:

  • Bring rice and 2 cups of water to boil. Boil for five minutes. Remove from heat and drain the water. Set rice aside. Discard organ meats. Beat eggs. Add flour, salt, pepper to a shallow dish. Dip chicken in flour, then egg and into flour again. Do this with each piece of chicken. Heat oil in oven proof skillet. Brown each piece of chicken until golden brown. Remove chicken to paper towels as it is browned. Remove most of the oil from the pan once the chicken pieces are all brown. Add garlic and onions to the skillet. Cook until soft. Add soup, rice, remaining water and chicken broth to skillet. Bring to slow boil. Add chicken. Cover and bake in preheated 350 degree oven for 45 minutes.
