Categories     Beef     Bake

Yield makes 6 servings

Number Of Ingredients 8

2 lbs chop meat
1 1/2 cup bread crumps
1/2 cup italian grated cheese
salt & pepper to taste
4 or 5 strips of bacon (or salami)
4 or 5 slices of white american cheese
1/3 cup ketchup
3 or 4 eggs

Steps:

  • In a bowl mix, chop meat, eggs, bread crumb, salt, pepper, grated cheese, ketchup (everything but the bacon and american cheese). Til completely mixed. Place 1/2 of it in a baking pan, lay the bacon and cheese on top (keeping it in the center) put the remaining meat mixture on top and mold so none of the cheese or bacon is showing. ( The better you mold it, the less likely there is to be any leaking!) Bake for 1 hour (400 degrees) or until meat is competely cooked.

This meatloaf is a great way to use up leftover ground beef. It's also a great way to get your kids to eat their vegetables. I always sneak in some chopped carrots and celery, and they never even notice.

The glaze on this meatloaf was a little too sweet for my taste. I would probably use a different glaze next time, maybe something with a little more spice.

This meatloaf was a little too dry for my taste. I think I would add some more liquid next time, maybe some beef broth or tomato sauce.

I was skeptical about the ketchup glaze, but it was actually really good! It gave the meatloaf a nice tangy flavor. I will definitely be using this glaze again.
