Yield 6-8 people

12 large eggs
l/4 cup half & half
1 teaspoon salt
Fresh pepper
2 tablespoons butter
1 1/2# Ricotta cheese (drained overnight to remove liquid)
1 1/2 cups Romano cheese
8 ounces Mozzarella cheese
1/2# bacon
1# Italian sausage (remove casing and crumble)

Steps:

  • Preheat the broiler. Whisk the eggs, half & half, salt and pepper. Set aside. Cook sausage and bacon in 12" nonstick overproof skillet over medium heat. Drain fat and add butter. Coat sides of pan with the butter. Raise heat to medium-high. Add the cheeses. Cook for a few minutes until the eggs start to set. Reduce heat to medium-low and cook until the Frittata is almost set, about two minutes. Place the skillet under broiler. Broil until top is set and golden brown, about five minutes. Let the Frittata stand about two minutes. Using spatula, loosen the Frittata from skillet and slide onto a plate.
