Eggplant Dressing image

My aunt made the best eggplant dressing. Unfortunately I did not copy her recipe. My husband gathered eggplant from the garden and I started searching online for a recipe that sounded like hers. I made it the other night and my family said the recipe was a keeper.

Number Of Ingredients 9

1 1 eggplant, chopped & cooked in salted water, save liquid if rice makes dressing too dry
cooked rice, dry
1 lb or more of ground beef
1/4 lb or more ground pork or pork sausage
1 c celery
1 c onion
1/2 c green onion
1/2 c bell pepper
garlic, salt, pepper & red pepper

Steps:

  • 1. Cook until done. Add eggplant and cook a few minutes more,
  • 2. Add as much rice as you like,
  • 3. May bake in oven a few minutes or cook on top of stove in heavy skillet.
