Five Chip Cookies image

I listed my favorite chips but you can decide what you want to use. Any combination will work. I also like to add 1/2 cup finely chopped pecans, almonds, peanuts, macadamia, etc - again your choice if you use nuts.

1 c butter or margarine, softened
1 c peanut butter
1 c sugar
2/3 c packed brown sugar
2 medium eggs
1 tsp vanilla exract
2 c all purpose flour
1 c old fashioned oats
2 tsp baking soda
1/2 tsp salt
2/3 c select 5 kinds only: milk chocolate chips; toffee chips, semisweet chocolate chips; peanut butter chips; vanilla chips; butterscotch chips, etc.
1/2 c nuts, finely chopped (optional)
1 Tbsp milk (optional - use if mixture is to dry to stick together but it probably won't be)

Steps:

  • 1. In a mixing bowl cream butter, peanut butter and sugars. Add eggs one at a time beating well after each addition. Beat in vanilla. Combine flour, oats, baking soda and salt. Gradually add to creamed mixture. Mix well. Stir in the chips by hand and nuts if using. Drop by rounded tablespoons on ungreased cookie sheet. Bake 350 for 10-12 minutes or until lightly brown. Don't over cook. Cool a minute before removing to wire rack to finish cooling.
  • 2. Makes approximately 4 1/2 dozen cookies
