Gazpacho Couscous Salad image

My husband and I tried this one out for lunch. We both thought it was tasty and very filling. Also would be good as a side for any grilled meats. Serves 4 as main dish and 8 as side dish.

This salad is a great way to use up leftover vegetables. I always have a bunch of odds and ends in my fridge, and this salad is a great way to use them up.

Overall, I found this salad to be just okay. It wasn't bad, but it wasn't anything special either.

This salad was a bit too time-consuming to make. I had to chop a lot of vegetables and it took me a while to cook the couscous.

I followed the recipe exactly, but my salad turned out too watery. I think I might have used too much cucumber.

I found this salad to be a bit too heavy. The couscous was a bit too starchy and the dressing was a bit too oily.

This salad was a bit too bland for my taste. I think it would have been better with a more flavorful dressing.

I love the combination of flavors in this salad. The sweetness of the tomatoes, the acidity of the vinegar, and the creaminess of the avocado all come together perfectly.

This gazpacho couscous salad was a hit at my last potluck! The flavors were so fresh and vibrant, and the couscous added a nice chewy texture.
