GRILLED CHICKEN PENNE AL FRESCO image

Number Of Ingredients 9

4 garlic cloves, peeled--small cloves
2 cups grape tomatoes
3 cups uncooked penne pasta
3 cups chicken broth
3/4 cup white wine
1/2 teasp each of salt and pepper
1 and 1/4 cups basil--loosely packed, divided
1 oz. parm. cheese (1/4 cup packed)
2 cups diced grille chicken breasts

Steps:

  • saute garlic and tomatoes in olive oil until tomatoes pop-- crush tomatoes add pasta, chicken broth, wine, salt and pepper cook until pasta is tender chop basil coarsely (reserve 2 tablespoons for garnish) add remaining basil, cheese and chicken and mix well
