GROWN UP MAC AND CHEESE image

1/4 lb unsalted butter
1/2 c garlic chopped
1/2 c flour
5 c whole milk warmed
1/2 lb goat cheese
1 T salt
2 t black pepper
1/2 t nutmeg
2 lb pasta
4 qts water
1 T salt
1/4 c olive oil
1/2 lb swiss cheese, grated
1/2 lb blue cheese, crumbled
1/2 lb sharp cheddar cheese, grated
1/2 lb fontina cheese, grated
1/2 c shredded parmesan

Steps:

  • preheat oven to 350 degrees Melt butter in 4 qt sauce pan over medium heat. Add garlic and cook slowly, about 5 min. Add flour and stir often for 5 mins. Add milk and cook until milk reaches consistency of heavy cream. Crumble in goat cheese and stir until dissolved. Add salt, pepper and nutmeg. Pasta; Bring water, salt and olive oil to boil. Add pasta, cook until al dente. Drain and put in large mixing bowl. Pour thickened goat/milk mixture over pasta and stir. Add the rest of the grated cheeses and mix well. Butter a 13x9 baking dish or 3 qt dish . Pour pasta in dish and top with parmesan. Bake for 30 min.

I tried this recipe and found it to be a bit bland. The sauce was not very flavorful and the cheese was not melted evenly. I would not recommend this recipe.
