GUMDROP COOKIES

Gumdrop Cookies image

My mom made these cookies quite often, and I always enjoyed eating these. She used the spiced gumdrops when making these cookies for Christmas (for that traditional seasonal peppermint taste), then she used regular gumdrops the rest of the year. Omit the black gumdrops though...they can give the the dough an unappetizing dark green tint. There are several variations of this cookie already posted on RecipeZaar, but this is the exact quantities and ingredients of my mom's recipe for this particular cookie. My mom used to make a batch of these cookies for our birthday parties, and then wrapped a stack of 3 cookies in cellophane, then tied it with pretty curling ribbon which she put in treat bags that our friends took home with them at the end of the party. Whatever was left over went into our school lunch bags for an extra special treat.

2 cups sifted flour
1 teaspoon baking powder
1 teaspoon baking soda

I was really excited to try these cookies, but I was disappointed. They were dry and crumbly, and the gumdrops were too hard. I think I might have done something wrong, so I'll try again next time.

These cookies were a bit dry and not as chewy as I expected. I think I might have overbaked them. I'll try again next time and see if I can get them right.

I was pleasantly surprised by how well these cookies turned out. I was worried that the gumdrops would make them too sweet, but they were actually perfectly balanced. The cookies were chewy and soft, and the gumdrops added a nice pop of flavor.

Not bad! A simple and straightforward recipe that resulted in tasty cookies. I used cherry gumdrops, which gave the cookies a nice tartness. Will try again with different gumdrop flavors.
