Hawaiian Potato Salad image

There are many versions of this in Hawaii, but this is one that a friend gave me there.

Number Of Ingredients 13

1 1/2 lb potatoes, peeled, cooked, chopped
1 c macaroni, cooked, drained
1/2 c shredded carrots
3 green onions, finely chopped
3 large hard boiled eggs, peeled, chopped
1 c frozen peas, defrosted
salt and pepper, to taste
3 sweet pickles, coarsley chopped, optional
2 stalk(s) celery, chopped, optional
DRESSING:
1 1/4 c mayonnaise
2 Tbsp sweet pickle juice
1 Tbsp mustard

Steps:

  • 1. In a small bowl, mix together dressing ingredients, set aside.
  • 2. Place the cooked potatoes, macaroni, diced eggs, carrots, peas, green onions, in a large bowl.
  • 3. Add the the dressing and gently stir to combine.

I'm not a big fan of potato salad, but this recipe changed my mind. The sweet potatoes and pineapple give it a unique and delicious flavor. I will definitely be making this again!

The recipe was easy to follow and the salad turned out great! I used red potatoes instead of sweet potatoes and it was still delicious. I also added some chopped bacon and it was a hit with my guests.
