Hominy Cheese Casserole image

I love hominy, but many people these days don't seem to even know what it is, and often a lot of folks think they don't like it. Well, after they taste it served this way, there's a very good chance they'll change their minds. :)

Number Of Ingredients 8

16 ounces yellow hominy or 16 ounces white hominy, drained
1 can condensed cream of mushroom soup
1 can Ro-Tel tomatoes
1 (3 ounce) can of chopped green chilies
1 1/2 cups grated cheddar cheese
2 slices cooked bacon, crumbled (optional)
1/4-1/2 teaspoon ground cumin, to taste
1/2 cup crushed corn chips

Steps:

  • Preheat oven to 350 degrees F.
  • Mix all ingredients except for the crushed corn chips.
  • Pour into a 2-quart casserole and cover with the crushed chips.
  • Bake at 350 degrees for 35 minutes.
