Italian White Beans with Chicken image

Packed with protein, this meaty, one-dish dinner can be ready in less than half an hour.

1 tablespoon olive or vegetable oil
1 tablespoon chopped fresh or 1 teaspoon dried basil leaves
1 clove garlic, finely chopped
2 cups chopped deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
1/2 cup chopped drained oil-packed sun-dried tomatoes
1/4 cup sliced ripe olives
2 cans (15.5 oz each) great northern beans, drained, rinsed

Steps:

  • In 10-inch skillet, heat oil over medium heat. Cook basil and garlic in oil 3 minutes, stirring frequently.
  • Stir in remaining ingredients. Cook, stirring frequently, until hot.
